Critical Baking Specifications
For bakeries, a seed that falls off the bun or turns black in the oven is a financial loss. Specifications must be exact.
Appearance & Colour Consistency
Because the product is a visible topping, buyers must strictly define the acceptable colour range. The specification must mandate absolute maximum limits for other-colour seeds (e.g., black seeds in a white batch), damaged seeds, and foreign matter.
Seed Integrity & Adhesion
Seed size uniformity, the limit of broken seeds, and the physical surface condition of the sesame directly affect handling and topping performance (how well it sticks to the dough). High breakage limits result in dust and poor aesthetic presentation. Buyer trials on the actual production line are recommended.
Food Safety Requirements
Microbiological, chemical residue, and contaminant requirements depend entirely on the destination market regulations and whether the seed will receive further lethality heat treatment (baking) inside your facility or is applied post-bake.
